This is a chayote. It is a vegetable native to Mexico and Central America, and when cooked, it can be handled like any type of summer squash.
It is also the only vegetable I have ever encountered that bears a striking resemblance to angry Kermit the Frog:
…which gives the carnitas and chayote tacos that I just ate a whole new meaning.

Woke up wanting something a lil’different for #brunch, so I made Frittata Muffins. Make them just like regular frittatas ‘cept instead of cooking them in a skillet, you make them in a muffin pan. These are #mushroom, #tomato,& green onion with a layer of Parmesan on top. When I put tomatoes in my eggs, I use grape or campari tomatoes and I scoop or rinse the seeds out to cut the acidity.
